Apparatus:
⦁ Whipped Cream Canister

⦁ 130 grams of sour cream
⦁ 1 gram of white pepper
⦁ 250 grams of matjes herring
⦁ 70 grams of crème fraîche
⦁ 30 ml of chicken stock

- To prepare Nitro Primtjes Espuma, you need first to take the Primtjes herring and cut it into very small pieces.
- Then take a blender and pour in your crème fraîche and poultry stock. Then add in Primtjes and blend till a fine purée is formed.
- Add sour cream to the mixture and blend again. Finally, sprinkle some white pepper and season the mixture.
- Then take a bowl and sieve. Pass this mixture through the fine sieve and into the bowl, place it aside.
- Take a whipped cream canister and place the contents from the bowl into it. Then screw on the other parts and the head on the whipped cream canister.
- Screw a single whipped cream charger on the head and shake the canister vigorously. Shake the canister at least fourteen times and then place it in the refrigerator.
- Let it cool down in the fridge for one to two hours and then dispense out the espuma and serve it with some fresh fillets of herring or fresh Primtjes.
- You can also take a small glass, then add some chopped beets to the bottom, and then add some chopped avocado on top of the chopped beets. Then chop the herring fillets in the same size and then dispense the Primtjes Espuma on top of it, garnish and serve immediately.
- You can also increase the volume of the dish if you are making it in one liter whipped cream canister.
- To prepare it in one liter whipped cream canister, follow the same recipe and double the ingredients' volume.
