  1. Take a saucepan and caramelize 3.5 tablespoons of maple syrup.
  2. Deglaze the caramel with milk and cream.
  3. From the vanilla pod, take out the marrow and stick and add in this mixture. Also, add salt and cinnamon.
  4. Separate egg yolks in a metallic bowl.
  5. Pour the hot milk-cream mixture and place this bowl over a water bath.
