Galaxy Gas Nitrous Recipe: Austrian Liptauer Espuma

Galaxy Gas Nitrous Recipe: Austrian Liptauer Espuma

Liptauer is a traditional appetizer spread that is popular throughout Austria, Hungary, and Slovakia. The name is derived from the word Liptov that is a region in Slovakia. Originally this spread is made from Bryndza, a soft cheese made from sheep’s milk. However, chefs all around Europe are experimenting with this spread with other soft cheeses conveniently available to them.

In the traditional method, the soft Bryndza is blended with butter so that the spread becomes creamy and fluffy. We have used quark cheese with heavy cream to make the sauce decadent and creamy. The Galaxy Gas Whipped Cream Dispenser increases the volume by adding air to the spread, thus making it very light and fluffy. You will fall in love with this aerated version of this traditionally thick spread.

The most commonly added seasonings are paprika, capers, anchovy, tomatoes, and minced onion. Ideally, the flavor of this spread should be smoky, tangy, and slightly salty. You can refrigerate the Liptauer espuma for many days in the refrigerator and use it whenever you are craving a tantalizing treat.

What Variations of Liptauer are found across the globe?

As Liptauer has gained popularity across several countries worldwide, you will see many interesting variations in its traditional recipe. People have modified this versatile dip to tailor their taste requirements and the ingredients easily available to them.

You will find recipes that call for sweet pickles or salty anchovies. Those who prefer hot and spicy notes in their dips add paprika or hot sauce to flame up their formulation.

Some people prefer their Liptauer smooth, so they blend some cream or sour cream in it. Some people like the chunky texture of Liptauer, so they add cottage cheese to the recipe.

We have made a Liptauer that is very creamy, light, airy, and frothy. The Liptauer attains this fluffy texture when you add cream and then whip it in a Galaxy Gas Whipped Cream Dispenser.

How to Serve Liptauer Espuma?

Austrian wineries in Vienna serve either a spicy or a mild Liptauer as an accompaniment to their wines. We paired our Liptauer espuma with “Gruner Veltliner wine” and found that it was a heavenly combination.

Liptauer is traditionally made in Lipto, Hungary, from fresh sheep’s milk cheese that was available there. Quark is a fresh creamy cheese that is an essential part of Central European cuisine. The traditional version of this cheese does not contain rennet, though you may find some in today’s commercial formulations. The texture of quark cheese is comparable with that of Greek yogurt.

Quark is considered a healthy food option as it is low in sodium and high in protein. Apart from Liptauer, or, rye it is also used in many desserts such as cheesecakes. It is conveniently available at European specialty markets, and of course its available online.

How is Bryndza made?

Bryndza – the typical sheep milk cheese is made from a milk mixture that constitutes 50% or more sheep milk. The soft texture of bryndza is similar to the texture of feta cheese.
