- For Char Mousse:
- 1 medium-sized char
- 4 capers
- 2 fillets of anchovy
- ¼ zest and juice of a lemon
- 80 grams of crème fraîche
- For Vitello Tonnato
- Olive oil as required
- 400 grams of rose veal rump or topside, it should be trimmed at 5 cm x 15 cm, at room temperature
- Sea salt flakes as per taste
- 50 grams of wild rocket
- 1 teaspoon of extra virgin olive oil
- ½ teaspoon of balsamic vinegar to serve
- To prepare the Vitello Tonnato, you have to heat the oven to 180 degrees centigrade and then take a frying pan. Pour some olive oil in the pan and add the veal, toss and turn till it turns brown; that might take about two minutes.
- Place a baking sheet on an oven tray, place the browned veal on the lipped baking sheet, and season with the seasonings.

- Now keep it aside and take a serving plate. On the serving plate, take the Vitello Tonnato and put the sliced veal on the plate, then dispense some char mousse on top of it and serve.
