This recipe is divided into two. There is Negroni and then orange and prosecco foam that you will have to make.
⦁ For orange and prosecco foam, you need:
⦁ 300gms of orange juice
⦁ 20gms of fructose, or you can use your normal sugar
⦁ 5gms of pectin powder
⦁ Juice and zest of two oranges
⦁ 80gms of egg whites
⦁ 70gms of prosecco, or you can use soda water
⦁ For Negroni, you need:
⦁ 250gms of Campari
⦁ 250gms of gin
⦁ 250gms of dry white vermouth
⦁ 250gms of soda water
⦁ Ice cubes to cool it down
This recipe is divide into 2 parts. First is the heartbreaker shake hacked version; next is the topping of whipped cream.
- To create the Negroni, mix all the alcohols (gin, Campari, dry white vermouth) in a huge jug.
- Fill up six glasses with ice cubes, divide the alcohol equally, and add around 30gms of soda water to each glass.
- After doing it, you have to add the foam from the whipped cream canister, so the recipe of foam is;
- Boil the 300gms of orange juice over medium heat. Separately mix pectin and sugar or fructose, whichever you are using, in a separate bowl and add it to the orange juice.
- Whisk constantly till it comes back to a boil again, and then remove it from heat and cool it down.
- After cooling, add the orange zest to it and strain the syrup after few minutes, or you can let it infuse for two hours.
- Strain the syrup using a sieve and mix it with the fresh orange juice, prosecco, and egg whites. Blend it with a hand blender for 10 seconds and add it to the whipped cream canister.
- Charge the whipped cream canister with two whipped cream cartridges and shake vigorously before attaching the next one. Place this mixture in the fridge to chill.
- Lastly, dispense the foam on top of the drinks you have made, and remember to always shake before using the whipped cream canister.
