Requirements:

  1. For Smoked Trout Mousse:
  • 125g of smoked trout
  • 250ml of fish stock
  • 10g of pureed horseradish
  • 80ml of heavy whipping cream
  1. For Crispy Phyllo Cones:
  • 1 pack of phyllo dough
  • Sesame seeds
  • 3 yolks of eggs

Procedure:

  1. To prepare the crispy phyllo cones, take a piece of cardstock and cut four isosceles triangles, which have a nine-inch base and six and a half-inch sides. Close the card stock to make a cone and hold it with a metal clipper.
  2. Cover the cardstock cones with aluminum foil, grease them with butter, roll out the dough, cut it, and wrap it around the cardstock.
