What is Kaiserschmarrn?
You can say that Kaiserschmarrn is scrambled sweet pancakes. The German word “Kaiser” means ‘Emperor’ and “schmarrn” means ‘a scrambled dish.’ It is said that this dish originated from Austria during the reign of Emperor Franz Joseph. It is traditionally served with Apfelmuss (apple sauce) and Zwetschgenroster (plum sauce).
How is the traditional Kaiserschmarrn made?
The real Kaiserschmarrn is a very soft, fluffy pancake. The fluffiness of the pancakes comes from stiffly beaten egg whites, which are folded in the rest of the ingredients. Some chefs even make the Kaiserschmarrn without baking powder. However, aerating a batter in a Galaxy Gas Whipped Cream Dispenser is a fool-proof method of making the fluffiest Kaiserschmarrn.
Is it necessary to use rum-soaked raisins?
All the ingredients impart their flavors, including the butter, the eggs, and the caramelized sugar. However, the rum-soaked raisins add the most unique and tempting flavor to this delicious dessert. Even people who aren’t fond of raisins enjoy them in these shredded pancakes.
Soaking the raisins a few minutes before preparing the batter is sufficient to give them their unique flavor. They are added before turning the side of the pancake.
How to serve sweet shredded pancakes?
This authentic Austrian sweet delicacy is eaten as a nutritious breakfast as well as a delicious dessert. In both ways, scrambled pancakes are a special treat for kids and adults. You can serve them with compost made with any fruits, berries, or even ice cream. The options are great, and all depends on your creativity. In Austrian and Bavarian restaurants, the shredded pancakes are directly served in cast-iron skillets.
Can you bake the sweet shredded pancakes?
Some recipes require you to cook the batter on the stovetop and then bake it in a preheated oven. Once it’s adequately cooked, you can bring it again on the stovetop for shredding and caramelizing sugar. The oven cooks the batter from the inside, while cooking solely on the stovetop may leave some uncooked batter in the inner side of the pancake.
The downside of only baking in the oven is that the surface does not get a good golden color. The oven may dry out the texture excessively, and the stovetop method keeps the Kaiserschmarrn moist from inside. So most chefs prefer only the stovetop method. However, the stovetop method requires a bit of expertise as it may turn out to be messy.
Why are my pancakes flat instead of fluffy?
A runny batter may cause your shredded pancakes to become flat. The batter should have a thick consistency that drips from the spoon.
What flavors can be added to sweet shredded pancakes?
Many recipes tell you to add some lemon zest, rum, and vanilla. You can add either of them depending on your personal preference.
